Fried Shrimp Cake with Cheese 水牛芝士蝦餅
Shrimp (medium size) 500g
Pork fat 40g (optional)
Spring onion (diced) 1 sprig
Cheese (Striped) 2 sheet
Salt 1/2 tsp
Plain flour 1 tsp
Egg white 1 no
Pepper dash some
Shell and devein shrimps, clean with salt. Rinse shrimps under running water for 15 minutes and pat dry.
Mash pork fat. Mash shrimps with chopper. Mix with seasoning and diced spring onion, then shape into small round cakes. Squeeze it, put in cheese and roll it up.
Heat wok/fry pan with 3 tbsps of oil. Fry shrimp cakes with medium heat until both sides turn golden brown. Serve.
