Salty Fish Eggplant 魚香茄子

Ingredients:

Egg plant                              3 nos.

Pork meat (Mui Tau)           400g

Salty fish (Ma Yau)             200g

Shallot                                  1 no.

Spring Onion                      some

 

Marination:

Salt                                     1/2 tsp

Chili sauce                         2 tsp

Pepper dash                      some

Cooking Steps:

  • Mince pork meat with salty fish by chopper. Marinate with salt and pepper.

  • Cut eggplant in portions. Soak in tap water.

  • Heat wok/fry pan with 3 tbsps of oil. Add sliced shallot, spring onion and chili sauce. Fry meat mix until it turns golden brown. Add eggplant until tender. Serve.
