Beef Shank 五味牛展 (牛腱)


Beef Shank 牛展          600g

Zanthoxylum 花椒        some

Star Anise 八角 (茴香)  some

Caraway Seed 小茴      some

Cinnamon 桂皮             some

Soy sauce 醬油              3 tbsp

Spring Onion 蔥           some   

Rock Sugar 冰糖           40g

Miso 日本麵豉                2 tbsp

Cooking Steps:

  • Put Zanthoxylum, Star Anise, Caraway Seed, Cinnamon, Rock Sugar and Miso   in boiling water

  • Put beef shank and cook for 30 minutes with moderate heat. Keep warm in saucepan for 30 minutes after turned off the cooker

  • Add soy sauce and repeat step 2 

  • Remove beef shank from saucepan and cool down. Use plastic wrap to tighten it and put in freezer for 30 minutes

  • Cut according to the thickness as wanted

  • Serve with the sauce as remained in saucepan.
