Grilled Spare Ribs with Preserved Plum Sauce 話梅燒排骨


Spare Ribs                    450 g

Salt                                1 tsp

Miso                               1 tsp

Pepper Dash                 some

Balsamic Vinegar          2 tsps

Maltose                          1 tbsp

Preserved Plum             2 pcs

Ginger juice                   1 tsp

Cooking Steps:

  • Blanch spare ribs one minute and leave dry. Marinate with salt, pepper, balsamic vinegar, ginger juice and miso for 1 hour minimum.

  • Remove seed and cut preserved plum into pieces. Prepare solution by mixing with balsamic vinegar and maltose.

  • Set grill or halo-cooker temperature at 250C. Grill for 6 minutes one side, apply solution to ribs surface and grill for 2 minutes. Turn back, apply solution and grill for 8 minutes until golden brown. (exact timing depends on level setting)
